Hendrick's Cucumber Collins - a fantastic drink made with one of the world's best gins!

I never much cared for gin……that is until I found Hendrick’s Gin. This liquid from the Scottish gods is nothing short of stunning and even non gin lovers seem to find peace with it. Forget about the medicinal and heavy Juniper berries of traditional styled gin, think cucumber and hint of citrus. Exceptionally smooth and no harsh, stringent aftertaste. It is good. Damn good. Like really damn good! I admit that Hendrick’s is what brought me back to the world of gin and I am very glad it did because I have found this whole other world of craft gins. We all know about the classic gin and tonic but if you want to really blow someone away, serve them the Cucumber Collins. The name is to be desired but boy howdy, the product is magical……and SIMPLE. You can thank me later so here is the recipe:
Hendrick's Cucumber Collins

Vegetal, light, and wonderfully aromatic, this cucumber collins highlights the vegetable’s presence in the gin itself—in the best way. In a Collins glass with ice combine:
2 oz Hendrick’s gin
1 oz fresh cucumber juice (from 1/2 blended cucumber, strained)
1/4 oz lemon juice
1/2 oz simple syrup
Sparkling water
Lemon twist, for garnish
Cucumber slice, for garnish
Combine first five ingredients in chilled Collins glass with ice. Pour into cocktail shaking tin. Pour back into Collins glass. Top with sparkling water, garnish with a twist of lemon and cucumber slice.
